High-Pressure Homogenizers — high-pressure pumps (usually piston/plunger pumps) that force the product to be homogenized through an adjustable gap under high pressure. Main characteristics are operating pressure and capacity. For comparison between different units, water capacity is used, as performance varies with different products. Widely used in milk processing. During homogenization, fat globules in milk are broken into smaller ones. This ensures even fat distribution, uniform product, and increased viscosity; the product becomes resistant to cream separation and oxidation processes.
